- Wash pork chops and tenderize slightly. - Preheat oven to 350 degrees. - Sprinkle salt and pepper on both sides - to taste. - Place in baking pan. The size is not important, just so all of the pork will lay flat in the pan without overlapping. - Cover pork with cheddar cheese and pour table cream over the top. You only need a little, say 1 tablespoon per pork chop. - Bake at 350 for 35 to 45 minutes. - Serve with mashed potatoes and a pickle on the side.

Babovka. Also called pound cake.

- Separate egg whites from yolks. Set the whites aside. - Preheat oven to 350 degrees. - Mix yolks with sugar. Add slowly oil, then hot water. - Mix in flour and backing powder. - Beat egg whites alone in another bowl until they expand about 3 to 4 times. use an electric mixer on high speed for this. - Add these egg whites to the batter. Mix by hand. Add vanilla if desired. - Pour half into greased round angel-cake pan. Mix the cocoa into the remaining half and pour on top of the first layer in the pan. Don't mix together. - Bake for 45 minutes. Check with toothpick (toothpick will not have mixture on it if the cake is done) by poking it into the cake. - Sprinkle finished cake with powdered sugar. - You could also add raisins or nuts to the original batter or pour chocolate on top of the finished cake.

- Chop onion. Cut pork into small squares (2 cm). - With medium heat, slightly brown the onion in oil. - Add paprika, pork, caraway seeds, pepper, salt, and seasoning mix. Mix while heating. - Brown pork slightly, turn heat down and add water. Let this boil until the meat is soft. Serve with rice or potatoes and vegetables (ex. broccoli).

Slovak Gulash

- Cut meat into squares (3cm). Chop onion. Press garlic. Cut potatoes into cubes. - Brown meat in oil, then add onion. Then add caraway, salt, garlic, paprika, and seasoning mix. - Mix in water and slowly boil until meat is slightly soft. - Then add the potatoes and continue to boil on low heat until potatoes and meat are soft. Serve with bread.

Dusena' Cukina - Simmered Zucchini

- Wash zucchini and cut into 1.5 inch strips, cut the seeds from the centers. - In medium saucepan, heat butter or oil, and let the zucchini start to simmer. Stir it a lot so it doesn't burn on one side. - Boil a cup of water and pour this over the tomato in a bowl. The entire tomato should be covered with the hot water. Let this sit only for 15 seconds. Then rinse the tomato with cold water and peel off the skin. Cut the tomato into cubes. - After the zucchini has cooked for about 8 minutes total, add the tomato cubes, the garlic, and the spices. Makes 2 portions. Simmer until the zucchini is soft. Serve hot and add salt to taste. You could also add some squash with the zucchini. This can be eaten by itself with bread, or use to make omelets, or as a side dish with some meat.

Stuffed Tomato in bread crumbs

- Cut off the tops of the tomatoes and scoop out the insides. Wash the zucchini and cut into little cubes. - Fry the zucchini in a buttered pan with salt and half of the Basil. - Mix bread crumbs with the rest of the Basil and the pressed garlic. Preheat the oven to 250 Celcius. (450 F). - Fill the tomatoes with the cooked zucchini and add salt and pepper to taste. Roll these in the bread crumbs with basil and garlic. - Put tomatoes on a buttered pan and put the rest of the butter on the tomatoes. Back for about 10 minutes. Makes 2 portions. You can serve this as a side dish with steak, lamb, pork,... Or you can serve this as a main vegtable dish. Instead of zucchini you can try mushrooms. 250 g mushrooms washed. Cut up the mushrooms and simmer in pan with cut spring onions in butter. Add 2 cl dry cherry and 150g table cream. Add to the tomatoes and cook the same as above.

Uhorkovy Salat - Cucumber Salad

- Peel cucumbers, and rinse them. - Use a grater/slicer to slice the cucumbers into thin slices(circles only 2mm thick). - Put the cucumbers in a bowl and add vinegar, sugar, and salt. - Mix together well. It should have a sweet/sour taste. Add more salt,sugar,or vinegar to get the taste you like. - Sprinkle the paprika on the top and serve as a side dish for almost any meal. - Tenderize the Turkey breast very gently. Sprinkle with salt and white pepper. - On one cuttlet place a slice of ham, cheese, and several asparagus stalks. - Roll this up and hold it together with tooth picks (wooden) - Greese pan with butter. - Place the turkey rolls in the pan and back in oven at 350 degrees for about 40 minutes. - While this is cooking, peel an apple and grate it. - After the turkey has ccoked for 20 minutes, sprinkle the shredded apple on top. - Finish cooking. This is great when served with mashed potatoes and a vegetable on the side..

Cookie waffers (like the middle of a Kit Kat bar)- plain or vanilla flavored - Prepare meatloaf pan. Line the inside with aluminum foil. Rinse with cold water. - Boil water in a pan. Place a mixing bowl on top of this. - Place eggs, sugar and shortening into the mixing bowl. Whisk this until it is well mixed. - Add cocoa, walnuts, candies, and waffers. Mix. - Pour this into the pan and spread it out evenly. - Cover and place in refrigerator over night.

Gulash from Segedin (City)

- In a pot heat up the oil, add chopped onion and saute. - Add meat, salt, paprika, and water - enough to cover the meat. - Cover and let cook for about 45 min on medium heat or until the meat is tender. - Then, add the sauerkraut and let everything simmer for another 30 minutes. - Mix together 2 to 3 tbsp of flour and 1 cup cream. Add to the pot and mix everything together until it is boiling. - Take the pot off the stove. Add salt to taste. - You could even add a little sugar for a sweeter taste.

Dumplings

- Heat up milk in a pot - Not too hot! Then take the pot off of burner. - Add sugar and yeast. Cover with a cloth and let it sit for about 20 minutes. - Prepare flour, egg and raised yeast from above step. Mix together. - Let this sit in a bowl for about 1 hour. - This will make the dough. - Spread out the dough with a rolling pin about 1 cm thick. - Use a cookie cutter to cut out circles. - On one circle place a tsp of jelly and put a second circle on top. Pinch the edges together around the sides. - Prepare a pot of boiling water and put a steaming tray on top. -Add a few of the 'buchtas' (the dough with the jelly), cover and let it steam for about 10 to 15 minutes. - Do not peak in!!! - Let it cook. - Take the buchtas out of the pot and serve. You can put butter on top and sprinkle with a pinch of cocoa powder and powdered sugar, poppy seeds, finely chopped nuts, or whatever you like.

Bryndzove Halusky

-Peel potatoes and finely shred them. -Add egg and flour. Make a dough that is not too tough but not to watery. You may use more or less flour or add a little bit of water if it is too tough. -Add 1 tsp of salt. -Boil water w 2 tbsp of salt. use teaspoon to drop a little bit of the dough into the boiling water. Be sure the water is always boiling. -When halusky are done they will float on top of the water, Pick them out with a strainer. -Because I didn't find bryndza here in the US, (it is cheese from sheep), I used 1 package of Feta Cheese and 3/4 of a pack of cream cheese, and 3-4 tbsp of milk. -Heat everything together. Mix all the time. When it starts to boil, remove from the heat. -Cut up little pieces of bacon and fry them. Serve halusky with the cheese sauce on top and sprinkle with the bacon pieces.
